Date mark all desserts that are potentially hazardous also. You all need to be using the same date marking system throughout the facility. Items marked were opened on tuesday (when store first opened) so i didn't make them throw it out. I will be back in 2 weeks to verify date marking compliance.
Critical Hot and cold holding N/A N/A N/A All the desserts in the display cooler were at unsafe temperatures (55*f). Must be holding 41*f or less. Items were discarded. Do not use this unit to hold any potentially hazardous foods until repaired. I will be back in 2 weeks to verify it has been fixed. Call or e-mail me when ready. All phf's were discarded.
Normal Light Bulbs, Protective Shield N/A N/A N/A Provide a shatterproof light bulb in the true upright cooler by the grill.
