This piece of beef still had a core temperature of 58 to 59f. Additionally, some small pieces were found to be at 48 to 49f. Corrected by discarding. Utilize several rapid cooling techniques (reduce the volume, place it on the top shelf in the airflow from the cooling unit, etc. ) to ensure this beef is cooled within the parameters identified in the food code.
