Properly cool smaller quantities in uncovered shallow bowls in the prep unit and place small amounts of chicken and beef to be used during lunch rush in a container that is submerged in the top of the prep unit. Corrected by discussion changing into smaller containers to expedite the cooling process. All foods will be consumed by end of lunch rush. Food is always discarded if not consumed. Made daily
