Found tcs food, raw shell eggs 49°F, liquid egg whites 47°F, and pooled eggs 49°F, on the bottom shelf of the 2 door sectional reach in cooler by the range on the cooking line. Note: tcs food on top and middle shelves of both coolers were at 41°F, and both coolers had poor air flow as cooler shelves were stuffed with food. Pic temporarily corrected by discarding tcs food above 41°F in both coolers. Pic has been instructed to monitor and ensure tcs food is held at 41°F, and coolers are stocked properly allowing all tcs food in coolers to be held at 41°F or lower. Found tcs food, sausage 51°F, various pasta 46°F, in a cold hold well, in the cook to order station, with ice that did not completely surround containers of tcs food. ||Observed numerous small flies on the post and wall at the end of the bar, and on the wall by the ice bin. Observed small flies in the dining room waitstation wall by the pop machine. Observed small flies in the kitchen beverage waitstation counter and wall, numberous flies on the drain lines and floor drain receptacle area. To correct clean all floor drains and surrounding areas in noted areas, keep facility in good repair, that is eliminate cracks, gaps, and areas where flies may breed, and have pest control company target flies.

To correct store utensils in food, with handles up to minimize contamination. Found in use knife and tongs stored in a bucket of sanitizer on the cooking and prep line. To correct discontinue storing in use utensils in sanitizer, and store on a clean surface or protected location. Found the bottom of ice scoop holder besides the ice machine with pooling water. To correct clean ice scoop holder, as ice scoop should be stored in a clean and dry environment.
