Corrected at time of inspection by discussing cooling method with pic for tuna salad. Employees will begin pre-chilling cans of tuna in addition to salad dressing, onion and celery to assure tuna salad is cooling within 4 hours from preparation time. No cooling violation cited today since time of preparation in relation to time of service less than 4 hours.
