Corrected at time of inspection by spreading out cooked whole potatoes into 3 shallow pans uncovered and placing into walk-in-freezer for 30 minutes. After 30 minutes potatoes dropped 60°F. Will continue to use walk-in-freezer to facilitate cooling process
