At time of inspection hot holding unit had not been turned on at opening; per pic meatballs with sauce had been reheated properly; were placed in unit approximately 30 minutes prior to inspection when they were found at 118°F - 120°F. Hot holding unit turned on to proper setting to maintain meatballs with sauce at a minimum 135°F
