Keep water hot enough to hold ph foods at 135 degrees f or above. Corrected by adjusting steamer at time of inspection. At end of inspection water temp in the steamer had elevated to 160 degrees f. Chicken was being maintained at 140 degrees f after reheat.

At time of inspection, pic indicated that the only food items kept in the cooler are the dressings and sometimes during lunch rush may have extra lettuce in the cooler. (lettuce was not in the cooler at time of inspection). The only food in the cooler was commercially prepared dressings. Unit was adjusted at time of inspection. Do not place lettuce in this unit unless the unit is capable of maintaining lettuce and any other potentially hazardous foods at 41 degrees f or below
