Pizza oven, the pic instructed employees to close the cover lids between use periods along with monitoring food cold holding temperatures every 2 hours. Observed an upright reach-in refrigerator with refrigerated potentially hazardous food items found at temperatures above 48 degrees f. Pic corrected this item by discarding the food items and placing the unit out of service. Repairs are scheduled, prior to this unit being placed back into service continuous cold holding of potentially hazardous foods at 41 degrees f. Or less is required.
