Pic corrected by discarding prosciutto, and has been instructed to monitor that employees are placing items back in cooler in designated storage/holding area, and tcs food is held at 41°F or lower. Note: this is not a repeated cold hold violation.

||Found a large stock pot of soup left on counter top to cool. Pic corrected by checking log sheet and found there was still time to cool soup from 135°F to 70°F in 2 hours, and immediately placed soup in an ice bath for rapid cooling. Later verified that soup had cooled to 70°F within 2 hours. Violation corrected. Pic has been instructed to monitor and ensure tcs food is cooled from 135°F to 70°F in 2 hours and then from 70°F to 41°F in 4 hours.

||Found the floor of the kitchen with peeling coating, holes and uneven spots. To correct repair and re-surface floor to be durable, smooth, and easy to clean. Found the ceiling access panel in the main kitchen missing. To correct replace missing access panel. Found a large hole in the basement ceiling and drywall missing in storage room. To correct ensure ceiling is not leaking, repair and finish ceiling and wall.

||Found the right door of the right door/drawer prep top cooler broken and held together with strings. Found water pooling in the bottom of the left prep top cooler. Observed the nut holding the slicer blade appear to have several grooves/notches. To correct verify that nut is designed for this slicer, and if not replace with appropriate nut. To correct repair/replace cooler door and eliminate water pooling in cooler.
