Critical Cooling Methods N/A N/A N/A Observed improper cooling method in place for breakfast bar food items. Hot potentially hazardous food shall cool within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F to 41°F using one or more of the following methods listed. Corrected at time of inspection by placing pan of scrambled eggs mixed with diced potatoes found at 54°F and pan of gravy found at 76°F into shallow pans uncovered; spatula left in gravy to stir throughout cooling process. Pan of scrambled eggs with potatoes and pan of gravy were covered with plastic wrap on shelf in walk-in-cooler. Facility did have ice surrounding gravy; there was approximately 5 inches of gravy in small pan. Per pic food was pulled off breakfast bar approximatley one hour prior to observing them in wic. Pic will discuss proper cooling methods with all staff. Food should be placed in shallow metal pans uncovered and stirred. You may also use your walk-in-freezer to facilitate the cooling process. In addition observed employee preparing broccoli salad with mayonnaise and bacon; found at 67°F at end of preparation. Placed in walk-in-freezer; employee will monitor with thermometer to assure salad cools within 4 hours to 41°F. Food items prepared with ambient air ingredients shall cool from 70°F to 41°F within 4 hours. Per pic all ingredients for cold potentially hazardous salads are pre-chilled

The right side of the 3 door 6 drawer reach-in-cooler on the cook line holding slightly higher then the left side. The gaskets are split, cracked, some sections of gaskets missing and some not attached to doors and drawers mainly on the right side. Door and drawer gaskets to be replaced asap. No potentially hazardous food items stored on the right side of unit at time of this inpsection. Right side of unit maintaining food at 46°F; left side at 41°F. Per pic all food removed from this unit end of day. Thermometer is located on the colder side of unit; please place thermometers on both sides

Please replace cracked floor tiles and re-grout as needed to provide smooth, easily cleanable surface and to eliminate standing water in these areas. (2) base coving in poor repair or missing in several areas, especially dishwash area. Please replace to provide good seal between the wall and the floor. Thank you for the patching and re-grouting that was completed in some areas of rear kitchen. (3) observed ceiling tile on cook line in poor repair. Please replace.
