||Observed 2 sheet pans of cooked rte chicken nuggets in hot holding cabinet at end of cook line with internal food temperatures of 115-125f (hot holding unit temp was turned down too low). All phf must be hot held at 135f or more at all times. Chicken has been in unit less than 30 minutes so pic corrected by reheating all chicken to 165f and turning up thermostat on hot holding cabinet at time of inspection. Violation corrected.
