Insert pans are being displayed at an angle and are not in contact with cold holding surfaces in unit. All phf must be cold held at 41f or below at all times. Will need to keep pans stored completely in cold holding unit or supplement well with ice to maintain proper temps. Salads were prepped less than an hour ago per pic, so pic corrected by rapidly chilling all salads in wif at time of inspection to 41f and filling cold wells with ice at time of inspection.
