Pic stated that daytime kitchen staff do not use slicer, but catering operations uses it at night. All slicers must be completely disassembled then washed, rinsed and sanitized after every use. Need to consult with night staff and ensure all washing and sanitizing of equipment gets completed. I will check this item at follow up inspection. Correct within 10 days. ,

All potentially hazardous rte foods (including all deli meats and housemade desserts) must have a 7 day consume by datemark label (day 1 is prep date). Pic corrected by properly datemarking all freshly prepared salads, wraps and yogurts at time of inspection. Critical corrected.

All chemicals used to sanitize fcs must be used as per manufacturers directions (in this case 150-400 ppm). To correct, please call ecolab and have machine adjusted to dispense at correct concentration. I will check this item at follow up inspection. Correct within 10 days. ,

Normal Cooling, Heating, and Holding Equipment cold holding Pizza preparation area upright cooler Inadequate Observed both traulsen upright coolers in pizza prep area in cafeteria with internal temps of 47-58f (units indicate they are in defrost mode). All coolers must be able to hold 41f or below at all times. Do not use these coolers until units have been repaired and are not in defrost mode in the middle of lunch.
Normal Warewashing, Cleaning Agents Cleaning agents for warewashing Soap Dishwashing machine Not used according to manufacturer's label instructions Facility not able to properly wash, rinse and sanitize in automatic dishmachine as i observed no soap in automatic soap dispenser (no backup soap containers available in entire facility). This item must corrected immediately. Pic stated that soap is scheduled to come in tomorrow and will be temporarily washing dishes in 3 compt sink with liquid dish soap until chemical shipment arrives tomorrow. I will follow up on this violation to ensure compliance.
