Cooked potentially hazardous food shall cool within 2 hours from 135°F to 70°F and from 135°F to 41°F within a total of 6 hours using one or more of the following methods listed. Corrected at time of inspection by placing cooked pasta, found at 74°F pre-portioned in bags into freezer for 3o minutes. At end of 30 minutes noodles found at 41°F. Per pic pasta cooked approximately one hour prior.
