Critical Reheating for Hot Holding Reheated food(s) prep area hot holding unit Reheated to less than 165 degrees F Observed 2 pans of rte taco meat in tabletop hot holding unit with internal food temps of 72-96f. All other phf in same unit was hot holding at 140f or more. Meat was removed from cooler and placed in unit 1-1. 5 hours ago per pic. All phf must be rapidly reheated to 165f within 2 hours. Please remember that steam tables are designed to hold food, not for rapid reheating. To correct, will need to reheat all phf in microwave or on grill before placing into hot holding. Pic corrected by reheating both pans of taco meat in microwave to 165f at time of inspection. Critical corrected.
