After 3-compartment sink was filled for manual dishwashing, there was inadequate hot water supplied to all handsinks upon further testing. The existing hot water heater is inadequate for its intended use. It is a 40 gallon whirpool water heater from 1999. Adequate hot water must be available during peak demand. Provide a new hot water heater with sufficient capacity to meet peak demand. Health department will review minimum size requirement prior to installation

This may be a circulation problem due to large containers blocking airflow on this side of the prep unit. Eliminate large containers to allow for better air flow.
