Pic then immediately donned gloves and continued prepping and wrapping rte hamburgers before i finished washing my hands. Food employees may not handle rte foods with bare hands and shall utilize proper utensils and plastic gloves at all times. Corrected by educating all staff on bare hand contact, rte foods, proper handwashing procedures and foodborne illness risk factors at time of inspection. Critical corrected
Critical Hot and cold holding Cold food item(s) prep area walk-in freezer Stored above 41 degrees F Observed 2 pans of chicken patties and 2 pans of chicken nuggets on prep cart in wif with an internal food temperature of 57-59f. Food on cart was originally in prep area (stored at room temperature) when i first arrived, then was immediately put in wif after i washed my hands. Staff stated that food on cart has been out of refrigeration for 1-1. 5 hours at most. All phf must be cold held at 41f or below at all times.
