||Observed filters on one half of cook line ventilation hood toward back of restaurant with build up of grease. Pic indicates filters are scheduled for cleaning within the week. Observed filters on one half of cook line ventilation hood toward front of restaurant to have been recently cleaned. Correct by cleaning now and on a more frequent basis to prevent the accumulation of grease.
||Observed food worker transporting house sliced frozen chicken wrapped in heavy plastic wrap on sheet trays between the prep area and the walk in freezer. The worker was placing the sheet trays on a wheeled 55 gal trash can to assist in moving the heavy trays. The chicken never contacted the trash can liner and the trash can liner had just recently been replaced. Pic was told to stop this practice immediately and to utilize the available sheet rack or other acceptable method. Later during the inspection movement of chicken on sheets trays was observed not involving the trash can. Item corrected
