Critical Safe/Unadult./Honestly Present Food dessert station display cooler Adulterated/contaminated Observed piece of rte sugar free apple pie in display cooler in dessert station that did not appear edible (pie was hard, discolored and had other pie remnants littered on crust and pan). Pie does not require datemarking as per 2005┬░Food code, but no one in facility quite sure how long pie has been in cooler. All food must be safe, unadulterated and honestly presented at all times. To correct, please rotate stock more often and discard all desserts if food shows any signs of spoilage or contamination. Pic corrected by discarding pie at time of inspection. Critical corrected. Please note: other potentially hazardous rte pies in same display cooler were datemarked correctly, but staff are not discarding pies as per use by date on container and big boy datemarking requirements. All ph rte pies were within the 7 day datemarking policy (as per 2005┬░Food code, but big boy has a 3-4 day discard policy). No datemarking disposition violations were cited, but please follow big boy datemarking policies as required.

Hot water was available at all fixtures in facility, but leaking water is creating a large amount of standing water on floor. To correct, please repair/replace hot water heater as soon as possible. Please note: if replacing hot water heater, will need a commercial unit and must replace with same (or more) capacity and btu's. Current water heater is 119 gallons. Also, please obtain proper permits as needed. , observed floor drain under dishmachine draining slowly and causing excess water to overflow from floor drain receptacle. Saw no visible signs of blockage in floor drain at time of inspection. To correct, please investigate source of blockage and repair as needed
