Bowls are resting on top of shallow layer of ice and ice not cooling foods adequately. Cut melons are considered potentially hazardous and must be kept at 41f or below at all times. Recommend keeping sliced melons in cold holding unit to maintain 41f. If using ice to keep food at 41f, will need to make sure ice surrounds pan to the top so food can maintain proper temperature. Melons have been on buffet for 1. 5 hours, so pic corrected by double panning melons and surrounding containers with ice to top of pan. Sliced melons now cold holding at 41f. Violation corrected.

Foods were prepared or removed from hot breakfast buffet almost 2 hours ago per pic. All phf must be rapidly cooled from 135f to 70f within 2 hours and from 70f to 41f or below within a total of 6 hours. Pic stated correct cooling methods: shallow pans, ice baths, cooling in wif, but appears staff did not follow these procedures today. Pic corrected by uncovering all pans of food and rapidly cooling all above mentioned food items in wif at time of inspection. Violation corrected.
