Critical Potentially Hazardous Food (Ti Cold food item(s) walk in cooler Stored above 41 degrees F Observed several back up pizzas on speed rack in wic with internal food temperatures of 63-69f. All other food in wic was cold holding at 41f or below. When i first arrived for inspection, these same pizzas were being stored on speed rack with other hot cooked pizzas in middle of kitchen. Within 3 minutes after i arrived and identified myself, the hot pizzas were placed in hot holding table on serve line and cold back up pizzas on speed rack were wheeled into wic. This procedure needs to be changed immediately. All phf must be cold held at 41f or below at all times. Do not store cold pizzas at room temperature and place hot pizzas on same rack for unknown lengths of time before lunch starts. All back up pizzas must be kept in wic until they are ready to be cooked. Since pizzas have been out of refrigeration for less than an hour, corrected by rapidly chilling all pizzas to 41f at time of inspection. Pic will educate staff on proper cold holding requirements as needed. Violation corrected
