Melons are not under any kind of temperature control. Sliced melons are considered potentially hazardous and must be kept at 41f or below at all times. Pic indicated that lunch lasts from 11am-1pm so they would like to use time control with the sliced melons. If wanting to utilize time instead of temperature control, will need to develop a time control policy to indicate how phf will be monitored and discarded as required.
