Critical Cooling N/A N/A N/A Corned beef that was cooked off yesterday was found at 52*-57*f, due to improper cooling methods. After brisket is cooked off, cut into at least 4 chunks, place on a sheet tray with seperation between chunks of meat, and place uncovered in the walk in cooler. This will allow meat to cool quickly. Once cooled to 41*f or less, place in a covered food container and date mark. Corrected by discarding the improperly cooled meat and following the above process from now on.
