Critical Cooling Methods N/A N/A N/A I observed an unsafe cooling method used on a soup in the walk in cooler. Staff put an ice stick in soup but did not stir the product while cooling. I found the outside edge of the soup at 78*f after 2 hours of cooling. For the next month, i want you to use the cooling chart i left you to document all foods that are cooked and then cooled. Save the charts for me to observe when i return in a month.
