These pans need to be thoroughly cleaned to remove this build-up. In the future, you may wish to consider washing these pans after each batch of food is used up, instead of re-using them to prevent the heat from the hot holding units from baking on these food containers. 2) a cap for a ketchup was observed with food residue still on it. Corrected by sending to be re-washed. 3) the small ice scoop cups (and the stainless steel holder) at the shake making station were observed unclean. Additionally, the blender rinser was unclean. Corrected by removing these items and cleaning them
