Realign so that doors are closed routinely throughout the day to avoid air temperature elevations in the unit. At time of inspection all product and air tmperature was 38 degrees f but door did stay slightly ajar when closing. Excess ice build up on the ceiling and interior door frame of the walk in freezer. Replace gasket as needed to seal door to unit to avoid temperature differentialy. This may be causing the excess frost build up in the unit.

If potentially hazardous foods such as whipped cream and or milk are to be stored in this unit during operation, provide an gel insulated plastic container that can be frozen overnite and used during the day to hold the products at 41 degrees f or below.
