Leave foods uncovered and use shallow pans/sheet trays etc. To help expedite the cooling process. All foods were temped above 135 degrees f at time of inspection. Foods are required to cool from 135 to 70 in two hours and from 70 to 41 degrees f in an additional 4 hours. Correct by using methods above to help expedite the process.
