||Found a covered container of sliced pastrami cooling in the 2 door glass cooler. Pic corrected by placing pastrami uncovered in the walk in cooler. Found 2 containers of soup partially covered cooling on the prep table. Pic corrected by removing lids and placing soup in an ice bath to rapidly cool. Pic has been reminded to cool foods rapidly from 135°F to 70°F in 2 hours and then from 70°F to 41°F in 4 hours. Pic has been instructed to monitor that employees are cooling food properly.
