||Observed facility not sanitizing dishware and utensils properly as i measured 0 ppm of chlorine in prep area dishmachine. Ecolab called at time of inspection. Need to sanitize as per manufacturers directions on chemical (in this case 50-100 ppm). To correct, please verify proper dishmachine operations and sanitizer concentrations more often and service as needed. Ecolab arrived and repaired dishmachine at time of inspection. Dishmachine now sanitizing at 50ppm. Critical corrected.
