Appears someone has partially cleaned interior, but missed several spots. To correct, please remove all ice from machine then wash, rinse and sanitize as per manufacturers directions. Critical Raw Animal Foods Cooking of raw animal food(s) cooking/preparation area gyro stand Not cooked to 155 degrees F for 15 seconds or equivalent Stuffed Observed gyro meat on spindle in cooking area with an internal food temp of 80f (gyro machine burners were not on at time of inspection). Gyro meat has been on spindle for less than an hour per pic. Must keep burners on at times when actively cooking and reheating gyro meat. Pic stated correct cooking process, but appears staff forgot to turn machine on this morning. Pic corrected by turning on burners at time of inspection and reheating meat to 165f.
