||Discussed with staff the process they use to cool soup at the end of the day, and found staff placing soup to be cooled in plastic storage containers. To correct use shallow metal pans to rapidly cool soups from 135°F to 70°F in 2 hours, and then from 70°F to 41°F in 4 hours.

||Observed dusty build up on the coil of the dessert and beverage display cooler. Observed heavy ice and frost build up on the edges of the ice cream freezer. Observed spotting/pitting on the soup well containers. To correct clean coil on cooler, defrost ice cream freezer, and replace soup well container in future.
