Consider cutting egg product in half so it will fit inside pan (many subways have used this approach to maintain the egg product at proper temperature). Continue to use your thermometer to monitor the food temperatures so you will know how high you can place the food items in the pans. Reminder the trayed deli meats and wrapped deli meats will be more difficult to maintain temperature since the paper insulates the food away from the cold sides of the pan,
