Pic stated that ham was thoroughly cooked then stored in hot box 1 hour at most. Hot box was functioning correctly at time of inspection. All phf must be hot held at 135f or more at all times. Please be sure that hot box is pre-heated before placing phf into unit. Pic corrected by reheating ham to 165f and returning food to hot box. Critical corrected.
