Critical Methods-Hot Water and Chemical N/A N/A N/A Hot water at the dishmachine was not reaching proper temperature to adequately sanitize the utensils. In addition the digital read out during the sanitization cycle was going haywire reading as low as 90 degrees f and as high as 116 degrees f. Repair unit for proper hot water sanitization. In the interim you must manually chemically sanitize the utensils after washing and rinsing through the machine. The 3rd compartment of the 3c sink was set up for proper manual sanitization prior to end of the inspection
