(Critical) The operator of this unit had no chlorine test papers available. Provide prior to your next use of this mobile unit

(Critical) In lieu of a hand washing sink this operation was required to maintain a supply of chemically treated towlettes for cleaning hands and a supply of an approved sanitizer. The mobile food service operator did not have moist hand towlettes available, nor was the operator aware that hand sanitizer was available for use in one of the storage containers. This operation must comply with your approved standard operating procedures for cleaning of employee hands. Provide necessary hand cleaning aides prior to your next food service event (saturday oct. 5th)

The ice pick handle and the handle for the casamiento scoop were resting in the food. Ensure staff maintain the scoop handles out of the food. Corrected by re-positioning these utensils with the handle extended out of the food

(Critical) Observed a partial hotel pan of tamales (14 at the time of inspection) being held hot at 119 to 126f. Corrected by returning the tamales to the cafe and reheating them to above 165f (verified)

No chlorine was detected in the wiping cloth storage pail. Provide 50 to 200 ppm chlorine to prevent bacterial growth when the towels are in storage. Correct today. Another employee had taken some to this service location from the cafe

Observed the handles for the ice pick and the ice scoop to be in contact with the ice. Ensure these utensils are stored to prevent handle contact with the ice. Consider providing a separate, clean container to store these utensils in between uses so they are not stored with the ice. Correct prior to your next service event
