(Critical) Open cup found behind the counter. Employee was drinking from an open cup while on duty. This is prohibited. Use a cup with a lid and a straw or a sipper cup to minimize hand to mouth contact. Corrected by discarding open cup and discussing with employee

(Critical) Insecticide found stored in the cabinet with togo cups, etc. Store insecticides in a separate designated location away from foods and food contact surfaces including togo cups. Corrected by relocating the insecticide to an approved location away from food contact surfaces

The cutting board by the prep unit is in poor repair and rutted. Once in this condition it is no longer a smooth cleanable surface. Replace cutting board so that it is new, smooth and cleanable.

The handsink in the rear is blocked for access for routine handwashing by the garbage can and a cappicino machine that is no longer in use. Relocate the trash can and remove the cappicino machine so that the handsink is accessible for routine handwashing.

Paper towels missing from the front counter/prep area handsink. Provide paper towels for proper hand drying.

(Critical) The sanitizer concentration in the bucket for wiping cloth solution was in excess of 400ppm. Use a concentration of 50ppm cl. Corrected by discussion and resetting up the wiping cloth solution at 50ppm cl.

(Critical) Datemarking is not in compliance. All ready to eat, potenitally hazardous foods held cold longer than 24 hours must be datemarked. The maximum expiration date is 7 days including the date the food is prepared or container/package is opened. Correct by implementing date marking immediately including packaged products such as cream cheese, deli meat, prepared tun fish and chicken salad if applicable.

Domestic hamilton beach warmers are being used to keep soups hot. These untis are domestic and not approved for use in a food service establishment. Replace with commercial nsf approved units such as heat n serves or equivalent.

Cabinets in the service area and in the self serve area need cleaning. Clean now and place on a more frequent cleaning schedule.

(Critical) Mold build up on the splash guard on the ice machine in the basement. Clean now and place on a more frequent cleaning schedule.

The upright freezer in the basement is domestic. Replace with commercial equipment when in need of repair. The canopener in the rear prep area is also domestic. Replace with commercial equipment when in need orf replacement.

Plastic utensils found with the mouth ends up in a container on the counter. Invert so that the handle ends are up to minimize contact with the mouth ends.

The door hinge on the prep unit is loose and out of alignment. Repair or replace if possible. If not make sure door stays closed at all times to maintain efficiency of the unit.

(Critical) The soup pot/container in warmer is not being cleaned within specified frequencies as indicated above. The soup is carried over at end of day and is cooled in same container, then reheated in same container. Discontinue this practice. At end of day remove soup from the container place into clean unused container as discussed and clean the container that was in the warmer. Corrected by discussion and cleaning soup pot/container.

Leaky faucet knob at mop sink covered with cloth towel. Repair leak and then remove towel.

Gasket on the true displa cooler is torn. Once torn the gasket is no longer cleanable. Replace split gasket.
