(Critical) Found time/temperature control for safety (tcs) food, potato cakes 105°F to 120°F in the mobile hot holding unit. Pic states food was received at temperatures above 160°F about an hour ago (verified from upper level kitchen). To correct review hot holding and service procedure and ensure tcs food is maintained at 135°F and above. I will return to verify that hot food is maintained at 135 and above, and proper procedures are being followed. Note: the potato cakes were not reheated to 165°F as lunch was being served and all food was gone within 1 hour.

Staff were using an old, stained quat test kit to test sanitizing solutions. To correct provide a new quat test kit. Note: facility was using quat that requires the qt-10 sanitizing kit. Please use the appropriate quat test kit if facility changes quat solution, that is quat san should use qt-10, and quat 146 should use qt-40.

Found tcs food, a case of yogurt 55°F sitting on the counter top of kitchen service line. Pic corrected by discarding yogurt, and has been instructed to take temperatures of food when receiving, and to place cold tcs food in coolers immediately. ,

Person in charge indicated that cans with dents are not used for service, however, a can with a dented surface was found being stored with ready to use canned food items. To correct this item you should designate a location for separate storage of product away from ready to use food items. This item was corrected during this routine inspection by the person in charge separating out this can from ready to use foods

Please provide food-grade container to store washed fruit. Facility re-using box fruit arrived in for washed fruit storage. Please consider a larger metal colander to wash fruit.
