(Critical) Observed the slicers hard to reach areas to have a heavy food debris build up. Equipment food-contact surfaces and utensils shall be cleaned: (1) except as specified in # (b) of this section, before each use with a different type of raw animal food such as beef, fish, lamb, pork, or poultry; (p) (2) each time there is a change from working with raw foods to working with ready-to-eat foods; (p) (3) between uses with raw fruits and vegetables and with potentially hazardous food (time/temperature control for safety food); (p) (4) before using or storing a food temperature measuring device; (p) and (5) at any time during the operation when contamination may have occurred. (Critical) Found the ambient air thermometer in the upright reach-in to be broken - displaying 60*f. Actual food temperatures in the unit were 408 - 42*f. To correct - replace this thermometer within 10 days. A follow-up inspection will be performed on or about march 1, 2014 to verify correction

Found the restroom to be without the required signage stating that employees must wash there hands before leaving the restroom. To correct - post signage that states "employees must wash hands"

Found mops drying with the heads upright with handle in mop sink basin. To correct - hang wet mops such that the head of the mop is hanging in/above the sink and the handle is secured in a holder above

(Critical) Found open gallon of 2% milk without an opened on date in the front prep unit. Also found freshly cut deli meat (ham, turkey) in undated containers in the upright cooler. Corrected - pic dated food items at the time of this inspection. This violation is a repeat violation within a 12 month time frame. This same violation was sited in august 2011 during a previous inspection. Because of this repeat violation, you will be required to complete a risk control plan and fax it back to my attention to this office by august 18th, 2012. Risk control plan form was discussed and given to pic at the time of this inspection

(Critical) Found raw shell eggs stored above rte grapes and butter in the upright cooler. Corrected - pic relocated raw shell eggs to the bottom shelf in this unit

Found many single service items, bowls , platters and containers stored upright with food contact surface exposed to dust splash and possible contamination,. To correct - store all items stated above inverted on the shelves to prevent possible contamination

No anti-choking poster displayed in establishment. To correct - display poster that was given to pic at the time of this inspection

Observed the blade of the can opener to be corroded. Replace with a new one--consider the type where the blade cuts the top seam from the side so as to not touch the food in the can

Observed the frp wall located behind the counter top baking oven to be scorched directly behind the exhaust port. Provide a panel of stainless steel behind this oven to prevent the wall from catching on fire. Consult your owners manual regarding isolation distance to any walls, as well as the building department/fire department as needed

Observed one of the metal stem food thermometers to be reading 10-12°F too high. Corrected by adjusting the thermometer to be accurate

1) observed excessive dust accumulation on the one door upright refrigerator's condenser coil. Clean this coil so the unit runs more efficiently. 2) the floor sink serving the three compartment sink is over-due for cleaning
