As discussed, there is a hole in the wall at the bottom of the stairs. Repair the hole as soon as possible. This will help prevent pest from entering the restaurant via the wall.
The thermometer in the small refrigerator is in the back of the unit. Thermometers must be located in a place that can be easily seen. Check to ensure that the unit is at a temperature of 41 degrees f. Or below.
The floor in the prep area needs to be cleaned frequently as an important part of a good sanitation program
