(Critical) On follow up inspection found tcs food, shrimp 41°F, chicken 41°F, in the top portion and chicken 41°F, dumpling 41°F, and tofu 41°F in the bottom portion of the 3 door prep top cooler. Pic states cooler was repaired. Violation corrected.

Found the tiled floor in the back kitchen area chipped and damaged. To correct repair tiled floor to be smooth, durable, and cleanable.
Found hood filters on the cooking hood soiled with greasy build up. To correct clean hood filters and keep clean.
Found cleaver stored between equipment on the cooking line. To correct store cleaver on cutting board or on a clean surface.

Found the drain line of the ice machine below the rim the floor drain receptacle with string hanging from filter, which previously held drain line and provided adequate air gap. To correct resecure drain line to filter and provide adequate air gap.
Found a sack of onions on the floor by the handsink. To correct store onions on shelf at least 6 inches off the floor and away from handsink.
Found the ceiling lights above the back prep table not working. To correct repair/replace lights.
At the rice cooker station observed a portioning scoop for rice stored in standing water. Correct by storing the scoop as outlined above
In the walk in cooler observed food stored in single service containers and reused food product containers. Correct by replacing these containers with multiple use food grade storage containers

At the main cook line observed a few non food contact areas with a heavy accumulation of grease: 1. On the gas supply line for the wok table. 2. On the wall adjacent to the deep fryer. The accumulation is below the cooking level of the fryer. 3. On the floor below the wok table near the wall. Correct by cleaning these areas now and on a more frequent basis.

Observed knives at food preparation area stored in a house made rack consisting of metal strap screwed to the wall. Knives were observed to be clean. However, this type of storage rack is not easily cleanable and will accumulate food debris over time. Correct by replacing house made rack with an nsf approved knife holder
