Pic temporarily corrected by dialing thermostat on walk in cooler to a colder setting, and has been instructed to monitor and ensure walk in cooler is holding tcs food at 41°F. Pic states they had just received a shipment and door was open. This cold hold violation has repeated 3 of 5 inspections and an administrative conference notice has been issued. A cold hold risk control plan is being requested. ,

(Critical) Found time/temperature control for safety (tcs) food, ham 45°F in the top and bottom portion of 4 door prep top cooler. Pic states facility air conditioner is not working, cooler compressor is to hot and not working well, and has placed a fan to keep compressor cool which should keep cooler working properly. In addition pic states he has been monitoring all coolers and they have been holding food at about 37 to 38°F. Found tcs food, sour cream 45°F, italian sausage 45°F, and chicken wings 45°F in the walk in cooler. Pic states they adjusted cooler to defrost and it needs to be adjusted to a colder setting. Pic temporarily corrected by adjusting walk in cooler to a colder setting. Pic has been instructed to monitor and ensure tcs food is held at 41°F or lower and to call for repair if needed. I will return for a follow up inspection to verify that tcs food is held at 41°F. ,

Found the door gaskets, bottom shelves and surfaces sealing areas of doors on coolers and freezers soiled with build up and accumulation. To correct thoroughly clean all noted areas and keep clean.

Observed an oxygen packet (which is packaged with pepperoni) in the pepperoni container on the pizza prep top cooler. Corrected by removing packet from pepperoni container. Pic has been instructed to monitor that employees are removing oxygen packet when filling supplies.

Found the can opener blade dull. Found the catch trays on the pizza prep top cooler damaged with cracked corners. To correct repair/replace can opener blade and catch trays

Found the edges of the pizza prep top cooler soiled with accumulation of food debris. Found the door gaskets of cooler soiled with accumulation. Found the exterior of the pizza oven soiled. Found the pizza hood filters and hood soiled with dust and grease. To correct clean as soon as possible, and clean on a more frequent schedule to preclude accumulation.

Observed employee working in cooking/prep area not wearing hat. To correct provide hats and remind employees to wear them.
