Observed numerous beverage dispenser nozzles to have an accumulation of debris/mold. To correct, please clean nozzles at a frequency specified by manufacturer or as necessary to preclude the accumulation of debris/mold
Observed several pans on the clean utensil storage rack above the 3 compartment sink to be stacked wet. To correct, please allow utensil/pans to completely air dry prior to stacking
Observed personal belongings of staff hanging on the storage racks adjacent to restaruant supplies. To correct, provide adequate storage space for staffs personal belongings separate from restaurant supplies
(Critical) Again, no paper towel was provided in the back kitchen hand washing station. Corrected by replacing the paper towel. A risk control plan was provided with this report for the management team to discuss, complete and return to me
The back kitchen hand washing sink by the food prep area was lacking a small trash can for the disposal of paper towel
Observed numerous pieces of equipment recently washed to be stacked in storage prior to fully air drying. Provide additional drip drying space (rolling cart or shelving unit) as needed
Observed a wet mop head to be resting in the mop sink basin. Corrected by hanging up the mop in the holder provided
The atmospheric vacuum breaker on the mop sink faucet is damaged. Purchase and install a rebuild kit (internal components and cap) for the make and model vacuum breaker provided
Chinese range: the housings for the drain food trap screens (all of them) have excessive food debris accumulation on them. Ensure these are cleaned at least 3 times per week
(Critical) Manager and staff were not aware of what the big 5 illnesses were or the symptoms that staff have to report for exclusion from work. You need to train all staff to know these things. Corrected by leaving a chart and education.
(Critical) No paper towels were stocked in the back handsink when you first walk in. Staff need to refill as soon as it goes empty. Corrected by stocking.
You need to provide a location for staff to hang up coats so they dont hang them on storage racks, which is not permitted.
