Found the door trim of the 1 door reach in cooler missing and covered with tape, and found the door of the lettuce cold holding unit covered with tape. Found time/temperature control for safety (tcs) food, numerous covered shallow pans of chicken slices cooling in the bottom of the 2 door reach in cooler. Pic states chicken was just cooked, covered and placed in reach in to cool. Found tcs food, 2 sealed bags of recently cut lamb slices cooling in the bottom of the prep top cooler on the cooking line. Pic corrected by partially removing covers on chicken, opened bags of lamb and placed chicken and lamb in the walk in cooler to rapidly cool. Pic has been instructed to monitor and ensure staff are properly cooling tcs food.

Found the 6 drawer cooler on the cooking line not in use or working. Found the basement produce walk in cooler in partial use, that is holding only non-tcs food, and a repair tech working on walk in cooler. (Critical) On follow up inspection found the drain line of the walk in cooler secured to wall and at least 1 inch above the rim of the drain receptacle. Violation corrected. Found the drain line of the basement ice machine secured to wall at least an inch above the receptacle on the side of the mop sink. Violation corrected.

(Critical) On follow up inspection found the overhead spray rinse nozzle with a shorter hose and secured to a spring that was attached to dishwashing hood, which provided an air gap of several inches above the flood rim of the dishwashing counter. Violation corrected.

Employee states soup was heated in stove top at about 11: 00 am, and placed in soup hot hold well.
