Observed ham that was prepped (sliced and cut) late this morning that was placed in a plastic 1/3 pan and then placed in the top rail of the pizza prep cooler. Corrected by having the manager located the 1/3 pan to the reach in portion of the unit to cool down to 41f prior to relocating placing back in the top of the unit

Observed the air coming out of the walk in cooler to be at 43f. This unit has been serviced on both of the prior two days. The owner called the refrigeration contractor who arrived on site during the inspection. One pound of refrigerant gas was added to the system. This unit was providing air in the upper 30's prior to the end of the inspection
(Critical) I observed one of the staff consuming a beverage from an uncovered cup. Any time drinks are consumed in the kitchen they must be in cups with a lid and using a straw. Corrected by behavior change.

(Critical) The salad cooler is not working properly. Foods were found at 60f or higher. You must be doing inspections of all of your coolers on a daily basis. Use the monitoring charts i left you for all 4 coolers. Do not store any potentially hazardous foods in this cooler until repaired and you confirm it holds below 41f. I will be back in 2 weeks to verify it has been repaired.
Repeat violation 2 times. Both paper towel dispensers in your kitchen are broken and must be replaced within 10 days. I will be back to verify they are replaced in 2 weeks. Also, must keep a roll of paper towels stocked in the employee restroom.

Observed a pail of wiping cloths in water without any chlorine residual. Maintain your wiping cloths in a solution of sanitizer to prevent bacterial growth between towel use
Observed burned out light bulbs above the mop sink area and at the entry to the walk in cooler. Please provide replacement light bulbs to better illuminate these areas
1) the top cover on the larger residential chest freezer is severely damaged (caved in, the plastic liner is cracked and the insulation is exposed). It is time to replace this unit with a commercial (nsf approved or equivalent) upright freezer. 2) at least three of the pizza prep cooler door gaskets are split open and trapping food debris. Order and install replacement gaskets to provide a smooth and cleanable surface. 3) the evaporator coil in the walk in cooler is in need of defrosting at this time
(Critical) The meat slicer and the soda nozzles were observed dirty. Staff need to be thoroughly cleaning and sanizing these items properly. The soda nozzles need to be pulled and cleaned once every 24 hours. Corrected on site by cleaning these items.
