(Critical) Observed employee not washing their hands when circumstances required handwashing. Food employees shall clean their hands before engaging in food preparation including working with exposed food, clean equipment and utensils and unwrapped single-service items. Corrected at time of inspection by interrupting dishwasher to wash his hands after handling soiled dishes before handling clean dishes. During busy evenings there are two dishwashers - one handling soiled dishes and one handling clean dishes.

Observed air break instead of air gap for ice machine drain lines in basement. Please re-establish air gaps for both ice machine drain lines. The air gap shall be twice the pipe diameter above the flood rim of the sink

Food safety manager certificate has expired. Please provide copy of current food safety manager certificate for one full time employee within 90 days. Not corrected.

These areas in need of cleaning: interior bottom of some refrigeration units and freezers, wine room floors and basement floors under staircase & in coat closet. Please clean now and as often as necessary to maintain in clean condition

(Critical) Observed washed fruit in handwash sink at bar. Handwash sinks shall be used for handwashing only and be accessible at all times. Corrected at time of inspection by removing fruit from handwash sink; fruit washed again in 3-compartment sink rear kitchen

(Critical) Potentially hazardous food at improper temperature in true four drawer reach-in-cooler rear kitchen. Potentially hazardous food shall maintain at 41°F or below or 135°F or above at all times. Temporarily corrected at time of inspection by discarding potentially hazardous food items found at 51°F. Most food items stored in this unit are not potentially hazardous. There are two other units in kitchen maintaining food <41°F to store the phf items until this unit is repaired. ,

(1) true four drawer reach-in-cooler not maintaining food at proper temperature. Refrigeration shall be capable of maintaining food at 41°F or below at all times. (2) several refrigeration units found with split or torn gaskets. Please replace to provide good seal and so smooth and easily cleanable

At end of inspection confirmed hot holding temperatures of stock; found >135°F in all pans

Critical corrected: at time of inspection discarded braising liquid from lamb found at 5o f in basement wic. Food item was cooled from previous evening. Layer of fat on top of liquid in metal third pan; consider using shallower pan, ice bath, no cover, stirring, etc
