Your dumpster is overflowing and lids cannot be closed on it. You need to have a large enough dumpster to handle the amount of refuse so the lids can be kept closed. You can also consider having more frequent dumps on your contract.

(Critical) Front handwash sink used to thaw/drain pasta in. Handsinks are to be exclusively used for handwashing. Use the back 3 comp sink for any food prep. Take strainer baskets from hanging next to handsink. Corrected by enforcing using 3 comp sink for any food prep.

The interior of the microwave was observed dirty. Staff need to use sanitizer cloth to wipe out microwave frequently throughout the day.

You need to adjust the screen door on the back exit to eliminate gaps and it shuts tightly to keep out pests.

No sanitizer detected in wiping cloth bucket. Keep at 50 -100 ppm.

(Critical) All of the pizzas and grinders on the buffet were found at 80*f. Warmer was not turned on. Upon further questioning, it was determined that items on buffet are to be on time control, however, there is no written policy stating this nor is the time marked on the buffet, as required by code. Corrected at time of inspection by having a written policy and marking 4 hour window of time. Lunch buffet is from 11am-3pm.

(Critical) All of the foods stored in the large sandwich prep cooler were found at 46-49*f, it the top rail and in the reach in cooler. Must be held at 41*f or less. All phf's were discarded. Do not use this unit to store any potentially hazardous foods until it is repaired and confirmed to be capable of holding product at 41*f or less. I will be back in 10 days to re-inspect this unit.

Replace the damaged door gaskets on the walk in freezer door.

(Critical) I observed an uncovered cup of pop at one of the prep tables. Staff must be keeping lids on drinks and using straws. Corrected by doing such.

Trash observed on the ground around the dumpster. Please keep cleaned up.

Please clean the floor drain more often under the 3 compartment sink.
