(2) cut tomatoes found double stacked on top of delfield 2 door lift top at improper temperature. Potentially hazardous food shall be maintained at 41°F or below in a refrigeration unit. (1) temporarily corrected at time of inspection by discarding all potentially hazardous food items maintaining at 49°F - 52°F in superior 2 door ric. There are 2 other refrigeration units in kitchen that are maintaining food at proper temperature to use temporarily until unit repaired or replaced. (2) corrected at time of inspection by discarding cut tomatoes found at 62°F. Discussed with employees to store cut tomatoes in pan in top of unit or bottom section of unit to maintain at 41°F or below. Do not over stack potentially hazardous food. ,

In addition could not locate the ppm sanitizer concentration on label use instructions for proforce quat sanitizer. Please contact your chemical supplier for this information. Not corrected. Facility used to use chlorine; owner considering emliminating the quat sanitizer and switching back to chlorine sanitizer. ,

(2) some door gaskets in poor repair on refrigeration units including wic's in basement. Please replace to provide a good seal and so smooth and easily cleanable.
