(Critical) Both of your metal stemmed thermometers are not accurate. One reads 45*f and the other reads 38*f in an ice bath. If calibrated corrected should read 32*f +/- 2*f. Staff need to be calibrating the thermometers on a weekly basis. Highly recommend getting a digital themometer, as they tend to not get out of calibration. Corrected by adjusting to correct temp.

(Critical) I found a can of raid insecticide in the cabinet under the sinks. If you are going to have insecticides in the kitchen, it needs to be commercial grade insecticide which is approved for use in foodservice facilities. Corrected by discarding.

Please identify one of the sinks in the two compartment sink as the designated handwash sink and do not place any items in this sink. A handwash sink shall be accessible for handwashing at all times. Corrected at time of inspection by removing clean utensils laying in bottom of sink so sink is now availabe for handwashing. Pic will label this sink as the handwash sink

(Critical) No paper towels available at the handwash sink in the women's restroom. Please provide paper towels at all times at all handwash sinks. Corrected at time of inspection by taking some paper towels from dining area paper towel dispenser and placing in women's restroom paper towel dispenser until building staff are notified. Please monitor the paper towel dispensers and soap dispensers at all handwash sinks on a more routine basis to assure that paper towels and soap are always available

(Critical) Found time/temperature control for safety (tcs) food, a container of tuna salad 44- 47°F in the domestic cooler. Determined that tuna salad was received at 48°F according to log sheet and made within 4 hours. Temporarily corrected by quick chilling tuna salad to 41°F in the freezer. To correct, pic has been instructed not to receive cold tcs food above 41°F.

Found 3 metal stemmed, dial faced thermometers out of calibration. Corrected by placing thermometers in an ice water bath and adjusting thermometers to 32°F.

Found the door gaskets, sheves, and bottom surfaces of cooler/freezer soiled with accumulation. To correct thoroughly clean cooler/freezer.

(Critical) Food transported by commisary and received for satellite service at 122 degrees f. Potentially haazardous food must be maintained at 135 degrees f during transport. Corrected by reheating to 165 degrees f and delivering food within 4 hours of removal from temperature control. Adjust oven in truck to hold at proper temepratures.

Drivers thermometer for checking food temps was 8 - 9 degrees f higher than inspectors. Calibrate and make sure sensor of metal stem is reaching product for proper temperature.

The oven in the transport truck was not high enough in temperature to hold transported food at 135 degrees f. Received at 122 degrees f. Adjust ovens accordingly to hold at proper temeprature.

(Critical) I found a gallon of bleach and and a container of dishsoap in a cabinet above the counter where clean kitcheware was drying, creating a potential for toxic contamination of untensils. Always store cleaning agents in the cabinet below the sinks to control this risk. Corrected by doing such.

No paper towels stocked at the handsink in the kitchen. Must always keep stocked.

You need to have a thermometer inside the cooler in the kitchen and monitor daily to assure holding 41*f or colder.

No handsoap available at the handsink in the kitchen. Always keep stocked. High suggest mounting a soap dispenser on wall at the handsink.

The 3 well hot hold unit was not completely plugged in and no heat on unit when i arrived. Caterer drops off food and turns on unit at this site. Caterer needs to be sure to check that unit is plugged in and working properly before leaving the site. Last inspection, this unit was not plugged in, so this appears to be an ongoing issue here! corrected by plugging in unit.
