(Critical) On follow up inspection found no step ladder blocking handsink and hot and cold water available in handsink. Pic states hot water valve and handle was replaced and faucet no longer leaks. Violation corrected.

(Critical) On follow up inspection found tcs food, marinara sauce 159°F and marinara sauce with meatballs 149°F in the hot holding well. Pic states they properly reheat tcs foods and hold hot tcs food above 135°F, but forgot to plug in hot holding well on the previous inspection. Violation corrected.

(Critical) On follow up inspection found tcs food a large covered container of marinara sauce 41°F in the 2 door glass cooler. Pic states marinara sauce was cooled properly, and they use ice wands and ice baths to cool sauce. This violation was corrected on routine inspection, and reverified on follow up.

(Critical) Found time/temperature control for safety (tcs) food, marinara sauce 120°F, and marinara sauce with meatballs 115 to 120°F in the hot holding well. Pic corrected by reheating tcs food to 165°For 15 seconds, and later determined hot holding unit was not plugged in. Pic has been instructed to monitor and ensure hot tcs food it held at 135°F and above and hot holding unit is plugged in and turned on.

(Critical) Found a step ladder blocking handsink and no water available in the back kitchen handsink. Pic states faucet leaks and a plumber will repair handsink in a few days. To temporarily correct turn water on and shut off at closing time if leak is reasonable, and relocate step ladder away from handsink. To correct provide hot and cold water at all times and relocate step ladder to a permanent storage area, as handsink shall be maintained and accessible at all times.

(Critical) Found time/temperature control for safety (tcs) food, 2 large covered containers of marinara sauce cooling in the 2 door glass cooler. Employees corrected by dividing marinara sauce into additional containers and placed in coolers to rapidly cool. Pic has been instructed to monitor and ensure tcs food is properly cooled.

Found door handle on the 1 door reach in freezer missing and excess ice an frost build up in freezer. To correct repair/replace door handle, and defrost freezer.

Found 2 open cups of coffee on the cutting board of the prep top cooler in the back kitchen. To correct either drink in designated area only or use cups that minimize contamination, such as cups with lids and straws.

Found the floor under equipment, edges and corners in the cooking and prep areas soiled with accumulation and build up. To correct thoroughly clean floor and clean on a more frequent schedule.

Found the kitchen hot, stuffy, and with exhaust fumes, and later determined hood fan not turned on. To correct when cooking equipment is turned on or in use, turn on cooking exhaust hood fan.

Found the floor in the cooking and prep areas with chipped tile and uneven surfaces. Found the base coving in the storage room loose, and missing in various spots. To correct repair floor to be smooth and cleanable, and repair/replace coving in storage room.

(Critical) Found the drain line of the ice machine on top of the pop machine in the front counter, draining into a receptacle without air gap. To correct provide an air gap of at least 1 inch from the drain line and rim of the receptacle. ,

(Critical) Used a chlorine test kit and found a very low chlorine sanitizer concentration in the sanitizing compartment of the 3 compartment sink. Employee corrected by adding chlorine to manufacturer's recommended range of about 200 ppm to the sanitizing compartment. ,

(Critical) Found time/temperature control for safety (tcs) food, shredded cheese 50°F in the bottom portion of the 3 door pizza prep top cooler. Employee corrected by discarding cheese and has been instructed not to use this cooler to hold tcs food, until repaired/replaced to hold tcs food at 41°F. Note: cheese was in a covered container with boxes blocking air vents. Found tcs food, cooked chicken 47°F, in a covered plastic container in the top portion of the 2 door prep top cooler in the back kitchen. Employee corrected by discarding chicken. Note: chicken was in a covered container in the top portion compartment, (double panning) which was insulating. To correct properly store tcs food, and monitor and ensure tcs food is held at 41°F, and repair coolers if needed. ,

Found the light above the pizza prep area not working. To correct repair/replace light.

Found the counter top surfaces and trim damaged with exposed surfaces. To correct repair/replace counter top to be smooth, nonabsorbent and cleanable. Found the 6 door sectional reach in cooler not working and not being used. To correct repair cooler or remove from facility. Found ice and frost build up in the 1 door reach in freezer. To correct defrost freezer.

Found an opened bag of flour on top of flour bulk bin container. To correct store flour in a more protected manner, such as in a covered storage container.

Found pasta cooling in a covered container in the sliding glass door cooler. Employee corrected by partially opening container to allow pasta to rapidly cool.

Found the floor under equipment, edges and corners in the entire facility soiled with accumulation and build up. Found the wall surrounding the pizza oven soiled with dust and grease build up. To correct thoroughly clean floors and walls, and clean on a more frequent schedule.

Found the top of the pizza oven soiled with accumulation and build up. Found dust build up on the sides of the back kitchen hood. Found the door gaskets of coolers soiled with accumulation. To correct clean noted areas and clean on a more frequent schedule.

Found the wood post under the front counter, used to support the pop machine unsealed. To correct seal/paint wood post to be nonabsorbent, smooth and cleanable.

Observed dry storage shelves in back kitchen area (near back door) with chipped paint and repaired with duct tape. All surfaces in kitchen must be smooth and cleanable at all times. To correct, please remove duct tape and repaint shelves as soon as possible

Observed the following areas in need of cleaning: interior door gaskets on prep unit coolers in kitchen and in pizza prep station (soiled with debris), interior of display cooler (including sliding door tracks) in hallway next to pepsi coolers (debris), and several shelves in kitchen (debris).
